Healthy Recipes

Looking for something delicious to make for dinner, or maybe an afternoon snack?  Here are some of our favorites, and actual recipes that we use on a daily basis here at the Learning Tree.  They're Learning Tree child approved so you know they'll be delicious, and healthy too!

Chicken Stir Fry

  • 4 boneless skinless chicken breasts
  • 1 bag stir fry vegetables
  • 1 1/4 cup whole couscous rice

  1. Cook chicken at 350 for 45 minutes.
  2. Cook stir fry vegetables until tender.
  3. Bring rice to a boil, then let simmer for 15 minutes.
  4. Cut chicken and mix with stir fry vegetables, couscous, and serve.

Ground Turkey Noodle Bake

  • 3 cups uncooked whole wheat noodles
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 1 (15 ounce) can of tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 tablespoon minced fresh parsley
  • 1 garlic clove, minced
  • 1 1/4 cup shredded part-skim mozzarella cheese

  1. Cook noodles according to package directions.  Meanwhile, in large skillet, cook turkey and onion over medium heat until turkey is no longer pink; drain.  Stir in tomato sauce and Italian seasoning, garlic, and parsley.  Bring to boil.  Reduce heat; cover and simmer for 10 minutes.
  2. Drain noodles.  Transfer to an 8 inch square baking dish coated with nonstick cooking spray.  Top with turkey mixture.  Sprinkle with mozzarella cheese.  Bake uncovered at 375 degrees F for 15-20 minutes or until cheese is melted.

Chicken Broccoli Burrito

  • 4 whole wheat tortillas
  • 2 cups grilled chicken strips
  • 1 1/3 cups couscous
  • 1 1/3 cups broccoli
  • 2 cups shredded cheddar cheese

  1. Cook chicken strips, brown rice and broccoli according to each of their package instructions.  Reserve hot.
  2. Warm tortillas in a microwave for 10 seconds.
  3. To build one burrito: Place 1/2 cup of chicken on the bottom third of each tortilla, followed by 1/3 cup of brown rice, then 1/3 cup broccoli.
  4. Evenly sprinkle 1/2 cup of cheese over the broccoli.
  5. Repeat steps 1 through 4 using remaining tortillas and ingredients.
  6. Roll each tortilla into a burrito, forming a large size burrito.  Cut each burrito in half, on an angle, and serve hot.
  7. Add salsa if desired.

Citrus Chicken and Couscous

  • 5 skinless, boneless chicken breasts
  • 2 cups and 3 tablespoons Swanson Chicken Broth
  • 1 1/4 cups whole wheat couscous
  • 1/2 cup and 2 tablespoons 100% orange juice
  • Orange slices
  • 3 tablespoons of fresh parsley

  1. Cook chicken in nonstick skillet over medium high heat 10 minutes or until browned.  Set chicken aside.
  2. Add broth, orange juice, onion and rice.  Heat to a boil.  Cover and cook over low heat 10 minutes.  Return chicken to skillet.  Replace cover.
  3. Cook 10 minutes or until chicken is done.  Stir in parsley and top with orange slices.

Vegetable Pasta

  • 1 lb whole wheat noodles
  • 1 bag frozen Normandy vegetables
  • 1/2 cup light Italian dressing

  1. Cook noodles.
  2. Bring Normandy style vegetables to a boil and let cool.
  3. Combine noodles and vegetables and then add dressing.  Serve cool.

Colorful Rice

  • 1 1/4 cup whole grain rice
  • 4 boneless skinless chicken breast
  • 1/2 bag frozen carrots
  • 1/2 bag frozen peas
  • 1/2 bag frozen green beans
  • 1/2 cup Parmesan cheese

  1. Cook chicken and rice.
  2. Bring all veggies to a boil and cut.
  3. Combine rice and chicken with the veggies.
  4. Mix and sprinkle with Parmesan cheese.
  5. Heat and serve.

Chicken Mex-Mac-N-Cheese

  • 4 boneless skinless chicken breasts
  • 1 lb whole wheat noodles
  • 1/2 cup cheddar cheese
  • 1/2 cup cottage cheese
  • 1/2 cup Parmesan cheese
  • 1 packet fajita seasoning

  1. Cook chicken and noodles.
  2. Cut chicken and combine with noodles.
  3. Add the cheddar and cottage cheese and mix.
  4. Add one packet of fajita seasoning and mix it on top with Parmesan cheese.
  5. Heat and serve.
